Cowboy Cornbread Recipe
A delicious casserole made with ground beef, seasonings, corn, beans, cheese, and cornbread.
Equipment
- 1 9 x 13 casserole pan
- 1 large frying pan
Ingredients
Ground Beef Filling
- 2 lb ground beef
- 14 oz canned corn (drained)
- 14.5 oz canned kidney beans (drained)
- 1.5 cups salsa (any kind)
- 1 packet taco seasoning
- 1/4 cup water
- 1/2 tsp salt
- 1/2 tsp pepper
- 1/2 tsp garlic powder
- 1.5 cup shredded cheese (any kind, mexican, cheddar, colby, etc)
Cornbread Topping
- 8.5 oz box Jiffy corn muffin mix
- 1 egg
- 14 oz can creamed corn
- 1/4 cup sour cream
Instructions
Beef Filling
- Begin by browning the ground beef in a large skillet over medium-high heat
- Add, taco seasoning, corn (drained), kidney beans (drained), salsa, salt, pepper and garlic powder. Stir to combine.
- Pour mixture into a 9×13 baking dish. Top with shredded cheese.
Cornbread Topping
- Combine the corn muffin mix, creamed corn, egg, and sour cream in a medium bowl. Mix until you have a thick batter.
- Spoon mixture evenly over the ground beef and cheese.
- Bake for 35-45 minutes or until the topping is cooked through and golden brown.
