Preheat oven to 400 degrees.
Filet the chicken breasts in half then cut again into two pieces to create sizes perfect for a sandwich. I bought chicken breast cutlets that were already sliced.
In a medium bowl, mix together all the marinade ingredients, then add the chicken to the bowl and mix it well to coat all the chicken. Set aside.
In another medium mixing bowl, mix together all the breading ingredients. Set aside.
Place a piece of parchment paper on a baking sheet. (parchment paper optional). Then place a cooking rack on the baking sheet and spray with cooking spray so your chicken doesn't stick.
Take a piece of the chicken from the marinade and dredge it in the bread crumb mixture. Place on the rack. Do this to all the chicken. I like to spray the top of the chicken with cooking spray before I put in the oven to give it extra crispiness but it's not necessary.
Cook in oven for 20-25 minutes at 400 degrees. Put on broil for the last two minutes of cooking.
While chicken is cooking, mix all the honey mustard ingredients in a small bowl.
When chicken is done, assemble your sandwich with honey mustard, chicken, lettuce, and tomato. Enjoy!
