ROASTED RED PEPPER PASTA RECIPE

Pasta coated in a sauce with grilled red bell peppers, onion, garlic, cream, parmesan, lemon and basil for a delicious creamy flavor. Enjoy!

Ingredients
  

  • 16 oz Pasta (any kind)
  • 1-2 Tbsp Olive oil (for the pan)
  • 1/2 Onion (diced)
  • 3 Cloves of minced garlic
  • 1 Jar of roasted red bell peppers
  • 3/4 cup Heavy Cream
  • 1/4 cup Pasta water
  • 1/2 cup Grated Parmesan
  • Juice of 1/2 a Lemon
  • 1 tsp Salt
  • 1 tsp Pepper
  • 1 tsp Italian Seasoning
  • 1-2 Tbsp Dried or fresh Basil
  • 1 tsp Red Pepper flakes (optional garnish)

Instructions
 

  • In a large saucepan, boil water and cook the pasta according to package directions. (make sure to reserve 1/4 cup of the water in a separate cup before draining the pasta when it's done.
  • Dice the onion and garlic. Drain the water from the red peppers jar then cut the peppers into large chunks.
  • In a large frying pan, put 2 tbsp of Olive Oil in the pan. Put in the onion and cook until soft.
  • Add in the garlic and cook for another minute.
  • Add in the red peppers, cream, and 1/4 cup of the pasta water.
  • Simmer for 3-5 minutes.
  • Sprinkle in grated parmesan and lemon juice, and stir to combine.
  • Add in the salt, pepper, Italian seasoning, dried basil, and stir.
  • Add in the drained pasta and stir. Garnish with optional red pepper flakes. Enjoy!
