Chicken, broth, onion, seasonings, rotel, green chiles, and white northern beans make this a delicious healthy dinner! Top with tortilla strips, avocado, and shredded cheese. Enjoy!
4 cupsChicken broth (I like chicken bone broth, either is fine)
110 oz canRotel
14oz canDiced green chiles
1TbspChili Powder
1TbspGround Cumin
1/2tspCayenne (or less if you don't like it spicy)
2tspSalt
215oz cansGreat Northern Beans (drained and rinsed)
Instructions
Dice up the onion and garlic. Set aside.
In the Instant Pot, pour in the chicken broth, rotel, green chiles, chili powder, ground cumin, cayenne, salt, diced onion, and garlic. Give it a good stir.
Now put in your chicken thighs. (I like to trim the fat off mine)
Put the lid on and your valve in sealing position. Hit the manual cook button for 25 minutes. (Your Instant Pot's button may be a high pressure button).
When the timer goes off, quick release the valve. Take out the chicken and shred or chop it on a cutting board. Then add back to the pot and stir.
Serve topped with avocado, shredded cheese, and tortilla strips

Notes
You can cook this in a crock pot on high for 4 hours, or low for 6-8 hours. You can also cook on the stove in a large pot or dutch oven, and simmer with it covered for 20-25 minutes or until chicken is fully cooked.
