WHITE BEAN CHICKEN CHILI RECIPE

Chicken, broth, onion, seasonings, rotel, green chiles, and white northern beans make this a delicious healthy dinner! Top with tortilla strips, avocado, and shredded cheese. Enjoy!

Ingredients
  

  • 5 Chicken thighs (or 3 large breasts)
  • 1 Onion (diced)
  • 3 Cloves of garlic (minced)
  • 4 cups Chicken broth (I like chicken bone broth, either is fine)
  • 1 10 oz can Rotel
  • 1 4oz can Diced green chiles
  • 1 Tbsp Chili Powder
  • 1 Tbsp Ground Cumin
  • 1/2 tsp Cayenne (or less if you don't like it spicy)
  • 2 tsp Salt
  • 2 15oz cans Great Northern Beans (drained and rinsed)

Instructions
 

  • Dice up the onion and garlic. Set aside.
  • In the Instant Pot, pour in the chicken broth, rotel, green chiles, chili powder, ground cumin, cayenne, salt, diced onion, and garlic. Give it a good stir.
  • Now put in your chicken thighs. (I like to trim the fat off mine)
  • Put the lid on and your valve in sealing position. Hit the manual cook button for 25 minutes. (Your Instant Pot's button may be a high pressure button).
  • When the timer goes off, quick release the valve. Take out the chicken and shred or chop it on a cutting board. Then add back to the pot and stir.
  • Serve topped with avocado, shredded cheese, and tortilla strips

Notes

You can cook this in a crock pot on high for 4 hours, or low for 6-8 hours.  You can also cook on the stove in a large pot or dutch oven, and simmer with it covered for 20-25 minutes or until chicken is fully cooked.
