McGriddle Breakfast Muffins
These sweet and savory McGriddle muffins are loaded with pancake batter, sausage, cheese, eggs, and a touch of maple syrup for the ultimate homemade breakfast-on-the-go.
Ingredients
- 1 lb breakfast sausage (pork or turkey)
- 2 cups all purpose flour
- 2 tsp baking powder
- .5 tsp salt
- 1 1/3 cup whole milk
- 4 oz freshly shredded cheddar cheese
- 1/2 cup maple syrup
Instructions
- In a frying pan, brown the breakfast sausage until no longer pink. Then shut off the heat and set aside.
- Meanwhile, in a large bowl whisk together the flour, baking powder, salt, eggs, milk, shredded cheese, and maple syrup until combined.
- Stir in the breakfast sausage into the batter mixture.
- Grab a 12 count muffin tin (or 18 count, I had extra batter), line it with muffin liners and spray with cooking spray.
- Spoon the batter into the muffin liners until full.
- Bake at 350 degrees for 25 minutes. May be shorter or longer depending on your oven. Just check them at 20 minutes. You don't want to over cook them and dry them out.
- Note: I had a little extra batter so I made them into pancakes on a pan.
- Ready to serve. Top the muffins with a little maple syrup or pancake syrup and enjoy!
