BEEF ENCHILADAS

This enchilada recipe is one to keep in your cookbook! It has an authentic Mexican flavor without having to use canned enchilada sauce. Great topped with sour cream and jalapenos! Enjoy!

Ingredients
  

  • 10 tortillas any kind (I used ones that were half corn half wheat)
  • 1 lb ground beef
  • 1 small onion diced
  • 1 Jalapeno diced
  • 1 package taco seasoning I used a homemade seasoning mix (see notes)
  • 1 tsp minced garlic
  • 1/4 cup water
  • 3 Tbsp salted butter
  • 1/3 cup all purpose flour
  • 1 tsp chili powder
  • 1 tsp ground cumin
  • 1 tsp salt
  • 1-2 cups shredded cheddar cheese to sprinkle all on top

Instructions
 

  • In a large frying pan, brown the hamburger meat, diced onion, and diced jalapeno.
  • Once the meat is cooked, add in the taco seasoning, water, and garlic
  • Remove meat from pan into a bowl and set aside.
  • Add butter to the pan. Once melted, whisk in the flour.
  • Add beef broth and whisk until smooth.
  • Add the chili powder, ground cumin, and salt.
  • Bring to a simmer then turn off heat once it thickens.
  • In a 9x13 casserole dish, coat the bottom with a few table spoons of the sauce.
  • Assemble the enchiladas. Place a few tablespoons of the beef mixture into each tortilla and line the dish with them. (warming the tortillas first in the microwave makes them easier to handle).
  • Pour all of the gravy sauce over the top of the enchiladas.
  • Sprinkle the top with shredded cheddar cheese.
  • Tightly cover with foil. Bake at 350 degrees for 30 min (take the foil off during the last 10 minutes)
  • Great topped with sour cream and jalapenos. Enjoy!

Homemade Taco Seasoning:
  • 1 Tbsp Chili Powder
  • 1 Tbsp Cumin
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 2 tsp salt
