CRISPY OVEN BAKED CHICKEN SANDWICH RECIPE

Oven baked crispy chicken in a sandwich with homemade honey mustard dressing. Enjoy!

Ingredients
  

FOR THE MARINADE

  • 2-3 Chicken breasts - filed in half then cut into two pieces.
  • 1/3 cup Sour cream
  • 2 Eggs
  • 1/2 tsp Ground Mustard
  • 1/2 tsp Paprika
  • 1 tsp Salt
  • 1 tsp Pepper
  • 1/2 tsp Cayenne

FOR THE BREADING

  • 2 cup Panko bread crumbs
  • 1/2 cup All Purpose Flour
  • 1 tsp Salt
  • 1 tsp Pepper
  • 1/2 tsp Onion Powder
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Cayenne

FOR THE HONEY MUSTARD

  • 1/2 cup Mayo
  • 1/4 cup Yellow Mustard
  • 3 Tbsp Honey
  • 1/2 tsp Paprika

Instructions
 

  • Preheat oven to 400 degrees.
  • Filet the chicken breasts in half then cut again into two pieces to create sizes perfect for a sandwich. I bought chicken breast cutlets that were already sliced.
  • In a medium bowl, mix together all the marinade ingredients, then add the chicken to the bowl and mix it well to coat all the chicken. Set aside.
  • In another medium mixing bowl, mix together all the breading ingredients. Set aside.
  • Place a piece of parchment paper on a baking sheet. (parchment paper optional). Then place a cooking rack on the baking sheet and spray with cooking spray so your chicken doesn't stick.
  • Take a piece of the chicken from the marinade and dredge it in the bread crumb mixture. Place on the rack. Do this to all the chicken. I like to spray the top of the chicken with cooking spray before I put in the oven to give it extra crispiness but it's not necessary.
  • Cook in oven for 20-25 minutes at 400 degrees. Put on broil for the last two minutes of cooking.
  • While chicken is cooking, mix all the honey mustard ingredients in a small bowl.
  • When chicken is done, assemble your sandwich with honey mustard, chicken, lettuce, and tomato. Enjoy!
